Today it is still grown in Central Europe, and it has reappeared in the market as a healthy food. Spelt wheat contains approximately 57.9% carbohydrates (excluding 9.2% fiber), 17.0% protein and 3.0% fat, as well as edible minerals and vitamins. In Germany, immature spelt wheat is dried and eaten as green grain (Grünkern).
